COOTAMUNDRA LAMB
It has won twenty
Royal Sydney Fine Food Awards since its launch in November 2009,
and is currently Grass Fed MSA Lamb Champion and Grain Fed MSA
Lamb Champion. These awards, plus an earnest and ongoing
commitment to excellence, have won Cootamundra Lamb’s director
his nomination for the Royal Agricultural Society of NSW’s 2011
President’s Medal.
What makes
Cootamundra Lamb remarkable? Cootamundra lambs are raised on
volcanic red loam enriched alfalfa grasslands in a region of
natural abundance nourished by the pods of native acacia
bailyana, or Cootamundra wattle. Nature is supported, not
overthrown, by the fourth generation farming family watching
over it.

Dorset-cross lambs are chosen and artisanal attention to detail
adds finesse to the superb animals produced without chemicals.
The meat is nutrient dense with distinctive clean lamb flavours,
enduring moistness and a uniquely creamy fat in optimal ratio.
Knowing what an
animal needs to thrive healthfully, when, and how to deliver it
naturally comes with the kind of hands on experience these
growers have accumulated over very many years. Every stage is
carefully overseen by a family member, including the abattoir
processes and delivery to Terry Wrights.
